Alex Kragiopoulos, co-founder and chief roaster at North Star, began his relationship with coffee in Kenya in 2011 when he was conducting research into whether Fairtrade schemes had brought social and economic development to coffee suppliers in Nyeri.
Having met the community, seen the love that went into their work and tasted the wonderful coffee that was produced, he returned home with an ambition to focus on quality speciality producers around the world.
‘The roastery was the first of its kind in Leeds to roast beans of the highest grade’
Establishing North Star with co-founder Holly in 2013, the roastery was the first of its kind in Leeds to roast beans of the highest grade and work with speciality-focused arabica farmers.
Today, the team strive to roast the best coffee they can get their hands on, sourcing in a way that puts the producer first and ensures their farming is profitable.
The roasts change from season to season as Alex and Holly purchase fresh green coffee in small batches all year round and often feature exclusive micro lots on the menu at the roastery cafe.
